Marinated Shrimp & Fresh Corn

At first glance, I thought this recipe might be a bit "Hoity Toity"; you know shrimp and all that...but actually, this is just sooooo do-able!  It has a very elegant feel, but it's really just simple healthy food!  Give it a try!

Marinated Shrimp & Fresh Corn

To be served cold
36 medium to large shrimp
Shrimp and crab boil (prepackaged, mixed seasoning)

1 ½ cups (or more) fresh corn kernels
Marinade
1 large egg yolk

1 ¼ cup olive oil

¾ cup red wine vinegar

3 tablespoons Dijon mustard

3 tablespoons chopped fresh chives

3 tablespoons chopped fresh parsley

1 tablespoon chopped shallot

De-vein & peel shrimp.  Cover with water in saucepan &
add several tablespoons of shrimp & crab boil.  Bring to a boil. After a few minutes when shrimp turn pink, cool in the water.
Steam corn kernels for 2 minutes.  Set aside.

Whisk together egg yolk, oil, vinegar, & mustard.

Add chives, parsley, & shallots.

Drain shrimp well & put in serving bowl.  Pour

marinade over it.  Refrigerate for at least 2 hours,

turning several times.  Refrigerate corn separately

& add to mixture when ready to serve.

Serves 6

Serving Suggestion

Serve with any cold white bean salad & vine ripened tomatoes

chopped fresh garlic, & fresh
 chopped spearmint leaves drizzled
with fresh Keye Lime juice.

Also a tropical flavored iced tea or
fresh mint leaves in a plain iced tea
is a refreshing twist with this dish as well.

Loo Hamlin - The 93 Year Old Wonder Woman!

Getting ready to party!

The woman herself!

Loo and her daughter, Merrill!

Loo Hamlin is TRULY a Wonder Woman!  Lynda Carter has NOTHING on this lady!

Loo is 93 years old and is our oldest club member.  She joined Lifestyle 10 years ago and has a vigorous swimming regimen which she diligently follows 3 days a week!  Like the rest of us, there are days when she just doesn't feel like working out, but Loo fights the urge to just lay around and she says that she always feels better once she has swam her laps!

Last week, we honored Loo with a cake and a small party while her daughter was visiting from France.  Loo is so inspirational that Allison, from the Daily Courier, interviewed her and featured her in the Sunday edition of the paper!

Lifting our glass in cheers to you Loo!  We love you!

Early Mornings ------ A great time to be at Lifestyle!

We open up our doors at 4:30am every weekday morning.  That's right, 4:30am!  Don't think you could get up that early?  No worries.  John already has the coffee brewing when you walk in the door!

Need more justification to hop out of bed while it's still dark to get "up in the gym justa workin' on your fitness!"?  Well, here you go....

Plenty of room in the free weights section!  Only the hardest of the hard core come this early, ergo....there's fewer people at the club at 5am.  No problems at all getting your own space!
Get your metabolism set for the rest of the day by starting your cardio early!  And soooo much cardio variety to choose from!

Can you believe this picture was taken at 5am?  I promise, you won't be in here by yourself!

And the morning crowd isn't just the older set!  What a great time to take your kid (okay, he's not really kid size, but he's still IS technically still a kid!) to exercise with you?  They get it done before school AND are starting a lifelong habit of regular exercise!

There's no better time to show off your guns than first thing in the morning!  This early, the day hasn't worn them out yet!

This is where the great minds meet and tough decisions are made!  There's a heavy duty brain cell workout going on here......just because you don't SEE those muscles flex DOESN'T mean they're not working!!!

Now set put that alarm clock across the room and set it for 4am!  Having to get out of bed to turn it off already puts you half way here!

What is success to you?

Have you ever considered what it means to you to be successful in your fitness goals?  Is it reaching that weight number that you've dreamed about for years?  Would you count yourself successful if you won athletic competitions?  Is success, for you, defined by how certain (or all) parts of your body look?  What would have to happen for you to feel successful in your fitness and exercise endeavors?

I'd like to suggest something.  What about if we redefined success?  Instead of focusing on a number, let's focus on the lifestyle (no pun intended!). Think about this:  If skinny is what you're after, you can GET skinny.  Of course you can.  Anorexics achieve skinny.  Bulimics achieve it.  Men and women wear their bodies out achieving the skinny goal and so can you.  But let's face it.  That's not what you really want.  You work out, stay faithful to your fitness routine because you want to be healthier; and we all know that skinny doesn't always equate to healthy.

So back to redefining success.  What if we define our success in terms of the healthy habits and activities that we do daily?  I always say, "Do the healthy things and then let your body do what it's going to do."  You may find that living with healthier habits does NOT make you lose those last 10 pounds.  Does that mean you're not successful?  NO!!!  Your brain may want to lose 10 more pounds, but your body may be saying, "No!  I need those 10 pounds.  They're not extra pounds....they're ESSENTIAL pounds!"

Success is an everyday term, NOT a once in a blue moon term.  Are you making healthy choices more now than you were last year?  Are you moving your body more now than a few weeks ago?  Managing stress better?  THESE are successful!  And success isn't a stagnant place.  It's not a trophy you win at the end of a tennis match.  It's ongoing.  Daily.  THAT'S the beauty of success!!  You can be more successful today than you were yesterday in managing your healthy habits.  And if you're less successful tomorrow, there's always the next day!

Cut yourself some slack and keep your eye on the real prize.  It's NOT the 10 or more pounds.  It's not the Iron Man Bench Press competition.  It's not firmer thighs (NO, it's NOT!).  It's a healthier, happier you who appreciates and cares for your body!  Now THAT'S success!!!!
